Turkey Apple Avocado Swiss Wrap with Yogurt Dressing

This is a beauty with all the colors popping out of the wrap sliced in half.  Red apple skins look the best but any will do.

Ingredients

½ red onion, sliced thin

½ cup nonfat Greek plain yogurt

1 tablespoon honey mustard

Freshly ground black pepper to taste

1 large apple, cored, thinly sliced (any kind, skin on)

½ cup shredded carrots

1 avocado, sliced into 6 slices

6 (1 oz) slices low fat sliced Swiss cheese

12 oz sliced turkey breast

6 large Bibb lettuce leaves

6 (6-8 in) whole wheat wraps or tortillas

Preparation

In a small bowl of ice water, soak onion for 10 minutes; remove and dry.

In a small bowl whisk together yogurt, honey mustard, salt and pepper.  Equally on each wrap, coat with yogurt mix, then layer lettuce, turkey, cheese, apple, avocado, carrots and onions; fold in the sides and roll up the wraps.  Slice into medallions or in half and serve.
