Ingredients:
1 ¼ pound pork tenderloin
½ teaspoon salt
Freshly ground pepper
¼ teaspoon each of allspice, mace and cinnamon
Cooking spray
1 tablespoon unsalted butter
1 sweet onion, chopped fine
2 large apples, peeled and cut into wedges (Granny Smith, Gala or Honeycrisp)
¼ cup apple juice or cider
1 tablespoon Dijon mustard
¼ cup maple syrup
1 tablespoon apple cider vinegar
1 tablespoon chopped fresh sage (can substitute rosemary or thyme)
Preparation:
Preheat oven to 450 degrees. *
Combine, salt, pepper and spices; sprinkle evenly over pork. Place pork on a roasting pan. Roast for approximately 25 minutes or until meat thermometer registers 145 degrees. Let rest for at least 3-5 minutes before slicing.
While pork is roasting, coat a nonstick skillet with cooking spray and heat over medium high. Melt butter; add onion and sauté until lightly browned. Combine apple juice, mustard, and syrup; add along with apples and heat until apples are tender. Add sage and vinegar. Serve apple mixture over sliced pork medallions.
