Egg, Arugula Avocado Toast

Ingredients:

4 slices whole grain bread, toasted

2 avocados, seeded, peeled and sliced

1 tablespoon lime juice

3 roma tomatoes, chopped

2 cups baby arugula

4 whole eggs, fried or poached

¼ teaspoon salt

Freshly ground pepper

2 green onions, thinly sliced

Preparation:

In a small bowl, mix avocados, lime juice and tomatoes.  Spread avocado mixture on each slice of toast, top with arugula and fried egg; sprinkle with salt and pepper; garnish with green onions. 

Yield: 4 servings
