Baby Kale Waldorf Salad

Ingredients:

½ cup nonfat plain Greek yogurt

2 tablespoons light mayonnaise

2 tablespoons apple cider vinegar

1 teaspoon honey

Freshly ground pepper

¼ teaspoon salt

2 large apples (Fuji, Pink Lady or Honeycrisp), cored and chopped into ½ inch pieces

2 ribs celery, sliced

1 cup seedless red grapes, halved

¼ cup dried cranberries or golden raisins

½ cup chopped walnuts, toasted

5 ounces baby kale, washed, trimmed and chopped

Preparation:

In a medium bowl, whisk yogurt, mayonnaise, honey, apple juice, salt and pepper.  Combine apples, celery, grapes, dried fruit, walnuts and chopped kale in a large bowl; toss with dressing to mix thoroughly. 

To serve, divide salad on four plates.

Yield: Serves 4
