Apples are high in fiber and the addition of whole grain oats and nuts adds protein and more fiber for a very satisfying dessert. Granny smith, Crispin, Pippin or Braeburn work very well.
Ingredients:
6 cups peeled, cored, chopped apples (2-3 pounds)
1 teaspoon cinnamon
2/3 cup packed light brown sugar, divided
1 teaspoon lemon juice
¼ teaspoon lemon zest
1 ½ cup oats
½ cup whole wheat flour
½ cup chopped nuts (walnuts or pecans)
3 tablespoons cold butter, cut into small pieces (or substitute trans fat free margarine)
Preparation:
Heat oven to 375 degrees. In a large bowl, toss apples with cinnamon, 2 tablespoons brown sugar, lemon juice and zest. Place mixture in a 13×9 inch baking dish coated with cooking spray.
In a small bowl, combine oats, flour, nuts, brown sugar and butter with a fork to disperse butter into the dry ingredients. Layer topping over the apple mixture; lightly coat with cooking spray. Bake for 30-40 minutes until browned. Serve warm.
